Chicken Parmesan
INGREDIENTS
- 4 skinless, boneless chicken breast halves
- 2 eggs
- 1/2 cup of panko bread crumbs
- 1/2 cup of italian bread crumbs
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of olive oil for frying
- 1/2 cup of all-purpose flour
- fresh mozzarella cut into 1/4 inch slices
- 2 teaspoons of chopped parsley
- 2 teaspoons of garlic salt
- 1 teaspoon of pepper
- 1/2 cup of Grandma's sauce
DIRECTIONS
Step 1
Pound chicken breast with a meat mallet until they are 1/2 inch thick.
Step 2
In a shallow pan or tray, mix together breadcrumbs, Parmesan cheese, and chopped parsley. In a separate tray, mix together flour, garlic salt, and pepper. Mix eggs in a separate bowl.
Step 3
Next you will coat the chicken. First, coat the chicken with the flour mix. Second, dip the chicken in the eggs. Last, coat the chicken in the breadcrumbs mix.
Step 4
Preheat oven to 425 degrees. Pour the olive oil into a large pan on high heat. Wait until the oil is hot then place the breaded cutlets in the hot oil. Cook on each side for 2-3 minutes or until Golden Brown.
Step 5
Add 1-2 spoonfuls of sauce on top of the centers of the cooked chicken. Place a few slices of mozzarella on top of the sauce and some chopped parsley on top of the cheese. Put in the oven to melt the cheese for 5-7 minutes. Serve with angel hair pasta.
